July is one of the most popular times to go, all the lavender fields are in bloom and the scenery is just sublime.  If your heart is set on seeing the lavender fields, mid-June to mid-July is the best time to go, but make sure to plan your tour 9 months or more in advance to secure the best hotels/guides and touring elements. May and September are great times to go, the weather is beautiful and the crowds are not as intense.
